			<content:encoded><![CDATA[<p>Perhaps it was my low energy (general malaise) and general ambivalence towards many things, but someone/something stuffed a very angry and insistent bee into my bonnet this week. Granted &#8211; I snuffled the odd piece of cheese, and I enjoyed a couple of pita wedges &#8211; however, for the first time in eons, I was able to meet my goals in a satisfactory manner. I consider 90% raw to be a fine accomplishment. Although many of the raw food activists &#8211; Alissa Chohen, Victoria Boutenko, for example &#8211; state that going 100% is the only way (for the majority of people) to refrain from reverting back to a mainly cooked diet, I am hopeful that &#8220;working up to it&#8221; might actually work for me.</p>
<p><strong>Juice 1</strong></p>
<p>- 1 collard leaf<br />
- 2 stalks of celery<br />
- 1/3 of a cucumber<br />
- 1/4 lemon<br />
- 3/4 large apple</p>
<p>Rating: 6/10</p>
<p><strong>Juice 2</strong></p>
<p>- 3 stalks of kale<br />
- 2 stalks of celery<br />
- 1/3 of a cucumber<br />
- 1/2 lemon</p>
<p>Rating: 7/10</p>
<p><strong>Entre&eacute; 1: Pasta and Marinara Sauce</strong></p>
<p>- 1 spiralized zucchini<br />
- 3 tomatoes<br />
- 12 sundried tomatoes<br />
- 3 dates<br />
- 1 bunch chopped parsley<br />
- 3 gloves garlic<br />
- 1 Tbsp Braggs seasoning<br />
- 1/2 Tbsp of Cayenne</p>

<p><strong>Entre&eacute; 2: Chocolate Chili</strong></p>
<p>Mix in bowl:<br />
- A copious amount of sprouts<br />
- diced red peppers<br />
- diced onions<br />
- diced tomatoes<br />
- 1/2 tp of Italian Seasoning<br />
- 1/2 tb of cayenne<br />
- 1/4 cup of chili powder<br />
- 2 tp of cacao powder</p>
<p>Puree in blender:<br />
- 4 cloves .garlic<br />
- 3 dates<br />
- 10 soaked sundried tomatoes + their water<br />
- 1 tomato<br />
- 1/8 cup olive oil</p>
<p>Mix together in bowl.<br />
Additionally spice to taste.</p>

<p><strong>Soup 1: Thai Coconut Soup</strong></p>
<p>Into a blender:<br />
- 2 cups coconut milk<br />
- 1/4 cup pineapple<br />
- some loose coconut for texture</p>
<p>Blend and pour into a bowl.<br />
Float mushrooms and additional pineapple in bowl. Sprinkle with cumin.</p>

<p>Given the success of the sweet potato fries, I decided to try to make regular potato chips. Somehow, though, the sweet potatoes receive a much better treatment in the dehydrator than regular potatoes which came out tacky, starchy, and nothing like chips. Perhaps it&#8217;s because I had never had sweet potato chips and therefore had no expectation that I was pleasantly surprised?</p>

<p>The above photos look delicious, but sadly the finished product was not quite so tantalizing. Raw food can be very quick, but it can also be the antithesis of Fast Food &#8211; in other words, akin to watching paint drying. Lesson learned: dehydrate longer than the recipe calls for. This causes a slight problem to find out that a pizza requires 10+ hours dehydrating in total and you only have 7-8 hours before your dinner guests arrive. Even at the 10 hour mark, the pizza crust was <em>still</em> on the mushy side, suggesting that we either had made it too thick, or the writer of the fantastic recipe book had a magic dehydrator.</p>
<p>In conclusion, I suspect we will prepare such fancy dishes a day ahead of time so that there will be time to further &#8220;cook&#8221; the end product should it end up retaining too much moisture.</p>
