This entry would have perhaps been better entitles: How to Eat LOTS of Sprouts… and cilantro. Given my “no-wastage” food rule, I had to eat a LOT of cilantro this week. I bought a bunch for one recipe but then had a large quality of it left and had to find some create ways to tolerate use it!
FIESTA SALAD
- Pea shoots
- Cilantro
- Green onions
- Bean sprouts
- Red onion
- Red pepper
Dressing:
- Olive Oil
- Fiesta chili powder
- Pinch of cayenne
- Bragg’s
MEXICAN DELIGHT
Base
- Red leaf lettuce
- Pea shoots
- Cilantro
- Green onions
- Red onion
- Red pepper
Guacamole:
- Avocado
- Tomato
- Red onion
- Garlic
- Fiesta chili powder
- Cayenne
- Lemon juice
Dressing:
- Olive oil
- Fiesta chili powder
- Pinch of cayenne
- Bragg’s
- Lemon juice
CILANTRO AVOCADO SALAD
- Copious amount of cilantro
- Red pepper, shredded
- Red onion
- Avocado
Dressing:
- Olive oil
- Fiesta chili powder
- Pinch of cayenne
- Bragg’s
Garnish with a sprinkle of lemon juice and garlic
