Cilantro Pesto

- Cilantro
- Brazil nuts
- Pepetas (pumpkin seeds)

Given the success of the sweet potato fries, I decided to try to make regular potato chips. Somehow, though, the sweet potatoes receive a much better treatment in the dehydrator than regular potatoes which came out tacky, starchy, and nothing like chips. Perhaps it’s because I had never had sweet potato chips and therefore had no expectation that I was pleasantly surprised?
