In the Raw: Pizza!

What happens after a new-age Vancouver-bound vegetarian gal and her handsome Guelph-based spiritually-minded vegan borrow an Excalibur dehydrator from a new friend? They have a pizza party!

The above photos look delicious, but sadly the finished product was not quite so tantalizing. Raw food can be very quick, but it can also be the antithesis of Fast Food – in other words, akin to watching paint drying. Lesson learned: dehydrate longer than the recipe calls for. This causes a slight problem to find out that a pizza requires 10+ hours dehydrating in total and you only have 7-8 hours before your dinner guests arrive. Even at the 10 hour mark, the pizza crust was still on the mushy side, suggesting that we either had made it too thick, or the writer of the fantastic recipe book had a magic dehydrator.

In conclusion, I suspect we will prepare such fancy dishes a day ahead of time so that there will be time to further “cook” the end product should it end up retaining too much moisture.
