Over the weekend, I had an experimental epiphany in the kitchen. It started off with a simple desire to make chocolates:
- 2 cups of dates
- 1/2 cup of walnuts
- 1/2 cup of pecans
- 1 Tbsp coconut
- 2 Tbsp raw cocoa
- 1 tsp maca root powder
- 1 tsp vanilla extract
- 5-10 allspice
- 1/2 inch piece of ginger sliced
The above (added into the food processor and mixed) resulted in a large brown mass that was too dry to form into balls. To increase the moisture of the “dough”, I added a large handful of spinach and processed thoroughly. The result was smooth, chewy, and easily formed into balls. For a final touch, I dusted them with more cocoa and coconut.
My review: absolutely delicious! The spinach was well-disguised, the ginger was warming to the stomach, and the flavour was divine.
